Release flink-connector-aws [6.1.0]

Hi all,

I'd like to propose a new release of the Flink AWS connectors (flink-connector-aws<http://github.com/apache/flink-connector-aws>).

The last release was 6.0.1 (2026-06-19). There are currently 7 commits on main since v6.0.1 that are merged but unreleased.

The main motivation is [ FLINK-39137<https://issues.apache.org/jira/browse/FLINK-39137> ] Add configurable interval between non-empty getRecords calls, which has been merged to main but is not available in any release. This change has been explicitly requested by customers and is the primary driver for cutting a release now.

I'm a committer (currently have change  https://github.com/apache/flink-connector-aws/pull/257  in review and reached out in the Flink community slack organization to get it prioritized) and I'm happy to volunteer as Release Manager for this release.

Thanks for initiating this.

+1 for the release and you managing it.

Would be good to be able to switch to an official build with these fixes in.
