[PR] GH-1499: Update ClassGraph to 5.0.0 (opennlp)

Fixes #1499
ClassGraph 6 requires Java 25, so this moves from the end-of-life 4.x line to ClassGraph 5, which supports Java 17 to 24 with the API of 6. ClassGraph 5 scans only what is enabled, so ClassgraphModelFinder now enables the classpath; Dependabot no longer proposes ClassGraph 6 for main and 2.x.
