[I] Cleanup docker-compose files [hudi]

   ### Task Description
   
   **What needs to be done:**
   Cleanup docker-compose files in `/Users/voon/IdeaProjects/hudi/docker/compose`:
   1. Remove all unused remote debugging ports 
   2. `bitnami/*` images are no longer usable, change them to `bitnamilegacy/*`
   3. docker-compose files are no longer valid as we have shifted to `java11`, bump them to `java11`
   4. Create a working docker-compose file that allows Hive to work with `java11`
   
   **Why this task is needed:**
   Our docker-compose scripts are now unusable they either:
   1. Fail to start due to tags no longer being supported/deprecated
   2. Java version too old, our java11 jars will not run on it
   3. Hive version we used in docker containers do not support java 11
   
   All these prevent the normal execution of docker-demo runs and integration testing.
