Setting sampler label while capturing

How can I set the request sampler labels (or add a prefix to it) dynamically as the requests are captured using the HTTP Proxy Server module?

Not possible.
Only thing you can do - is set a variable (user defined variables) under
the proxy and it will allow proxy to convert any value it captures with a
matching variable.
