OPENNLP-1881: Pin Pester to 6.0.0 and fix Invoke-Pester -Path param
Pester v6 removed the legacy -Script parameter from Invoke-Pester,
breaking the Windows shell-tests job since Install-Module always
pulls the latest release. Pin the version and switch to -Path so the
job stays reproducible across future Pester releases.
