I've added the General Entity Overview to the wiki section of docs.ofbiz.org here: http://docs.ofbiz.org/display/OFBIZ/General+Entity+Overview
and added a section incorporating Andrew's note, I guess if someone could move the page to a more appropriate space this issue can be closed
