Without enabling jenv export plugin, the GFSH script identifies these vars:
JAVA_HOME=
GF_JAVA=java
GF_JAVA_PARENT/lib/tools.jar=/Users/klund/.jenv/lib/tools.jar
TOOLS_JAR=/System/Library/Frameworks/JavaVM.framework/Versions/CurrentJDK/Classes/classes.jar

After enabling jenv export plugin (jenv enable-plugin export) these are the values of the vars:
JAVA_HOME=/Users/klund/.jenv/versions/oracle64-1.8.0.66
GF_JAVA=/Users/klund/.jenv/versions/oracle64-1.8.0.66/bin/java
GF_JAVA_PARENT/lib/tools.jar=/Users/klund/.jenv/versions/oracle64-1.8.0.66/lib/tools.jar
TOOLS_JAR=/Users/klund/.jenv/versions/oracle64-1.8.0.66/lib/tools.jar

So, another work around is to enable the export plugin for jenv by executing "jenv enable-plugin export"
