When using a `BulkMessageWriterBolt` paired with a `KafkaMessageWriter`, I can only set the name of the destination topic statically.   The name of the topic cannot be set or changed dynamically.

For example, I cannot fetch the topic name from a Zookeeper configuration and set the value dynamically.  This would have been useful for [METRON-701|https://issues.apache.org/jira/browse/METRON-701] and is referenced in this [Github conversation|https://github.com/apache/incubator-metron/pull/449#issuecomment-282028282].
