### Description
This `[modification](https://github.com/apache/incubator-kie-kogito-runtimes/pull/3752/files#diff-461c94a17da49dde37a86b3bed196e443e9a08bb92f87d25cf0a01e1bf646e8aR151-R157)` does not belong to the test class, but to StaticWorkflowApplication initliazation
Also there are some trivial improvements in the way the static instance is initialized and how optionals are handled
