chore : Allow projects like camel-spring-boot to override exclusion list
camel-spring-boot and other downstream projects can now provide their own
exclusions.sh file to override the default EXCLUSION_LIST which is designed
for the main Camel repository. This fixes build failures when modules in the
default exclusion list don't exist in the downstream project.
