Drop the fallback version entirely - the BOM owns the servlet API version

A prefer('6.0.0') fallback is still a hardcoded version that drifts the same
way the original did. With 8.0.0 unreleased there is no compatibility
constraint: builds that opt out of the BOM (grails { bom = null }) or apply
the grails-gsp plugin standalone are responsible for constraining gspCompile
themselves, same as every other configuration they manage by hand.
