[I] [Task]: Fix outdated hop-conf options and variable details in the variables, Azure VFS and Set Variables pages (hop)

Adalennis opened a new issue, #9008:

   ### What needs to happen?
   
   - variables.adoc, System properties: the JSON example uses a "systemProperties" key that hop-config.json doesn't have (the System variables tab and --set-variable write a "variables" list of name/value/description), and `hop-conf.sh -s` doesn't exist: the option is `--set-variable` (`-sv`). The section also mixes Java system properties with Hop's system variables.
   - vfs/azure-blob-storage-vfs.adoc: documents `-azi` / `--azure-block-increment` and a file block size, which were removed in 2024, and misses `-aze` (Azurite emulator). The "Tools / Options" menu reference is outdated.
   - pipeline/transforms/setvariable.adoc: the Default value is used only when the transform receives no row (an empty field sets an empty value), and with more than one row the transform fails with "Only 1 input row was expected to set the variables and at least 2 were received".
