Two Questions
I now am left with more understanding and more questions!
1) Some emails come through twice. Once as the "original" version and once as:
<<< No Message Collected >>>
Any ideas?
2) I get the impression that the spam is being "automatically"
deleted. Probably how I set it via a configuration at one point.
Somewhere I read that procmail is that guy responsible. Where is the
procmail config file and how can I fix this?

Neither of these really have anything to do with spamassassin so im not
sure how much help you will receive from here. I, for one have never
used procmail, and certainly not with any control panel (ensim). Is
there a reason that you cannot go to ensim for support?

Generally speaking: /etc/procmailrc
Look for something directing messages to /dev/null
