Online courses?
Hello,
I'm looking for some online CloudStack courses/training, but I couldn't
find anything. I've checked Udemy, LinuxAcademy, Lynda etc ... there are no
available courses (everything is full with OpenStack).
Except ShapeBlue's 1000EUR course

Latest one is here http://docs.cloudstack.apache.org/en/latest/ and it's version-agnostic - covering different OS requirements, so I'm not sure of your question ?

Is there any "modern" documentation, for example CentOS 7? The documentation is based on CentOS 6, so I'm wondering if it's still accurate/updated.

As Suresh said, documentation is good place to start, you should pick up a lot of info from there.
Otherwise you can either spend your money on a course produced by a company that do mass-production of courses, or you can spend your money on specialized courses from ShapeBlue - depending on whether you plan this course more for fun and general learning or if you need more serious skills for using Cloudstack in production.
