> bin/config.sh takes care of making sure ACCUMULO_LOG_DIR exists (within the bounds of ACCUMULO_VERIFY_ONLY). After sourcing config.sh, bin/accumulo then attempts to create ACCUMULO_LOG_DIR, withotu checking ACCUMULO_VERIFY_ONLY.
