There are now 3 levels to set performance stats enabled on Camel startup
- All (= as now) = fine grained
- RoutesOnly (= only enable stats for route inputs) = coarse grained
- Off = disabled for all

You can from jconsole enable/disable them on the individual routes and processors on the fly as you wish
