[~granders] Are you working on this task? I would be happy to help with the tests in case you haven't started. I am new to ducktape, but I can take a look at the existing tests to get started.
We would also find it useful to run all the ducktape tests optionally with SSL-enabled clients. Looking at the current service definitions, this looks possible with a small amount of change. If this change would be of interest to the wider community, I will be happy to submit a patch.
