    fix(docker): run notebooks MinIO as root
    
    The Chainguard image runs as uid 65532. On native Linux Docker the
    ./data/minio bind mount is created root-owned 0755, so the server
    cannot write to it and mc never creates the warehouse bucket. The
    previous quay.io image ran as root, so this restores the behaviour
    the notebooks stack had before the image switch.
