Ludovic,

the problem you see here is that <fileset> or <dirset> will never go higher
than their basedir, so you can not include something in .. .

What you really want is to have two <src> elements, one pointing to src.dir and
one to inprogress.src.dir - using the location attribute of <src> in both cases.
