Click on the field to see what the font has changed to.
Maybe changing everything to Arial Black will make the change more visible.
I dont "save as", just press the "save" toolbar button, then close the
application with the "red X" on windows.
My font also changes to Calibri when I reopen the file.

Rob Brunner, 11/6/2013:
OpenOffice Version 4.0.1
OS: Windows 8
I can confirm that this is an issue. After testing, I can add that this issue
only applies to custom fields. Non-custom fields update and save with no
errors. Also, font sizes of the custom fields properly save and update as well,
so the issue seems to be limited to font-styles.

Failed to reproduce bug using example file. I tried in two different ways that
might be of interest. Both times I changed all of the font to Arial, then saved
the file with one of the following two options:
(1) "Keep Current Format"
(2) "Save in ODF Format"
Upon reopening with Writer, I observed that the font remained Arial for both
attempts.
