I tried to reproduce this using the same version of Cassandra that you downloaded and couldn't.
I updated the instructions to include Windows and Cassandra 0.7 configurations here: http://wiki.apache.org/cassandra/RunningCassandraInEclipse.
I did however notice that you aren't running the -Dcassandra-foreground argument. What you are probably seeing the output before Cassandra starts running in the background since it seems like everything processed fine.
You could either include the foreground option or access Cassandra using the cassandra-cli. Do either of these options give you better results?
