   This does work actually, but it's a little unwieldy
   
   ```python
   df5 = df.assign(category=df['category'].astype(pd.ArrowDtype(pa.dictionary(pa.int8(), pa.string()))))
   pa.Table.from_pandas(df5, schema=schema)
   ```
