[PR] fix(table): sort identifier field IDs for deterministic schema updates [iceberg-go]

### Description
Fixes #1776
As said in the issue, `UpdateSchema.Apply()` derived `IdentifierFieldIDs` by iterating a Go map, yielding non-deterministic order. `Schema.Equals` compares these ids positionally, so identical schemas compared unequal at random, producing spurious duplicate schema versions in `BuildUpdates()`.
Sorting `identifierFieldIDs` in `Apply()` to produce a deterministic, canonical order fixes this problem.
### Testing
Added `TestSetIdentifierFieldDeterministicOrder` as a regression test. (across multiple iterations, asserts sorted output and cross-run equals)
