The [RestConfigurationDefinition|https://github.com/apache/camel/blob/678749846e1120d7446a66d9e676cdded63fe25f/core/camel-core-engine/src/main/java/org/apache/camel/model/rest/RestConfigurationDefinition.java#L47-L49] defines swagger as default API component to be used but since we have both swagger and openapi, we should remove the default and let Camel auto discover the component base on what it is on the classpath.
