[PR] Chore: Update variant and geospatial versons to workspace [arrow-rs]

Variant and geospatial have been released, they now should follow the versioning of the other crates in this repo
There seemed to be some issue publishing the 57.1.0 release with these crates.

Update versions to follow other crates
