I've picked this work back up. I've got PR 91 ([https://github.com/apache/solr/pull/91)] ready to go that covers the Core Admin API done.
I looked through the table of pages that [~ctargett] listed on 20/Apr/18, and I think they are now all covered, or the reference to a V1 API isn't the focus. I think that updating the remaining pages like enabling-ssl.adoc, schemaless-mode.adoc etc would make sense once we deprecate V1 API.
WDYT about merging PR 91 and calling this issue done and closing?

A few v2-style APIs are already used as examples, but there's nothing consistent.
