The [QuickStart page |https://github.com/apache/incubator-yunikorn-core/blob/master/docs/user-guide.md#quick-start] has a one step uninstall guide:

helm uninstall yunikorn --namespace yunikorn-ns
{code}
This step will not uninstall the admission controller and the configmap.
Also, the uninstall command differs from helm versions. For example in Helm 2 instead of {{helm uninstall}} we have to use {{helm delete}}.
