Apparently CMAKE_SYSTEM_PROCESSOR could be used: https://cmake.org/cmake/help/v3.16/variable/CMAKE_SYSTEM_PROCESSOR.html

Edit: not sure actually. Looks like that variable is optional: https://gitlab.kitware.com/cmake/community/wikis/doc/cmake/CrossCompiling
