Since 1.0.0 does not require a new shim, it should be sufficient to update the version used to compile the 20S shim.

-hadoop-0.20S.version=0.20.3-CDH3-SNAPSHOT
+hadoop-0.20S.version=1.0.0

Or, on the ant command line, add -Dhadoop-0.20S.version=1.0.0

The hive build as is should run on 1.0.0.
