Custom query parameters are accessible via the UriInfo object that is passed as parameter in each processor method.

Example:
ODataResponse readEntitySet(GetEntitySetUriInfo uriInfo, String contentType) throws ODataException;
=> uriInfo.getCustomQueryOptions();
