minifi docs /path/to/dir_containing_individual_processor_docs /path/to/new_processors_md

command can be used to generate the PROCESSORS.md file, but the format it generates is broken in many small ways: missing blank lines, unnecessary lines, it prints "Properties" instead of "Relationships", it doesn't format the tables correctly, etc.
