I have posted a message "Replace itext with PDFBox for XDocReport project?"
to PDFBox for the same problem than you (replace iText with PDFBox due to
license) for our project XDocReport (converter for odt -> PDF and docx ->
PDF).

I have seen quickly PDFBox and it seems that it doesn't provides widget like
table, chapter, etc
If you have the same problems than us, I will be happy to share our
experience.
