I have been reading a lot about POS but I couldn't find anything related to
customization of POS and some training/documentation.
Please advice if there is any place where we can find something.

Please use rather user ML for such questions http://ofbiz.apache.org/mailing-lists.html
You will get a better support and it's more fair to share with everybody
The wider the audience the better the answers you might get
This said, no, there are no training documentation apart maybe some help at https://cwiki.apache.org/confluence/display/OFBIZ/POS+System
You might notably though enjoy the user manual if ever you missed it...
