[PR] Bump happy-dom in UI packages to patched release [airflow]

## Summary
- Bump `happy-dom` from `^17.4.4` to `^17.6.3` in both Airflow UI package manifests:
- `airflow-core/src/airflow/ui/package.json`
- `airflow-core/src/airflow/api_fastapi/auth/managers/simple/ui/package.json`
- Refresh lockfiles accordingly:
- both `pnpm-lock.yaml` files
- `package-lock.json` in the simple auth UI package
## Why
Dependabot reports critical/high advisories for vulnerable `happy-dom` ranges in these two UI projects. Updating to a patched line remediates the direct dependency alerts while keeping the change scoped to UI dev/test tooling.
## Validation
- `pnpm install --frozen-lockfile --ignore-scripts` in `airflow-core/src/airflow/ui`
- `pnpm install --frozen-lockfile --ignore-scripts` in `airflow-core/src/airflow/api_fastapi/auth/managers/simple/ui`
- `npm ci --ignore-scripts --legacy-peer-deps` in `airflow-core/src/airflow/api_fastapi/auth/managers/simple/ui`

@bbovenzi rebased this onto current main and the change is now moot: main has already moved `happy-dom` to `^20.8.3` in `airflow-core/src/airflow/ui` and `^20.9.0` in the simple-auth UI, both well beyond the `^17.6.3` this PR was bumping to. There's also a `pnpm.overrides` block pinning `happy-dom@>=15.10.0 <=20.8.7` to `>=20.8.8` which covers the security range. Closing - nothing left to land here.
