I can implement a hexdump processor to the project, as my first contribution, if this issue hasn't yet been resolved. 

If I understand correctly we are looking for a processor that converts arbitrary flowfiles into hexdumps. Then with the existing GetFile and PutFile processors we can create hexdump of files to/from filesystem.
Also as described in the hortonworks question linked, adding the first 16 hex as attribute named "first16hex".
I can add some costumization of attributename.
