[FLINK-40828][core][table] Address review comments

Drop the VariantFormatter interface and SqlStringVariantFormatter, since nothing used them as a type. Printing now calls VariantCastUtils#toPrintString directly instead of creating a formatter per value, and JsonVariantFormatter#format takes a BinaryVariant. The UNKNOWN and INVALID placeholders live only in BinaryVariantUtil#undecodableNode. escapeJson reuses one JsonFactory instead of creating one per string.
