[PR] [build] Fix quickstart JAR selection for release builds [fluss]

   ### Purpose
   
   Preparing the Flink quickstart Docker dependencies after a release build fails with `Multiple matching JAR files found`: the connector glob matches the runtime, sources and javadoc JARs. This also affects the S3, Paimon, Iceberg and tiering dependencies.
   
   ### Brief change log
   
   - Exclude `-sources.jar`, `-javadoc.jar` and `-tests.jar` before checking the match count.
   - Ignore non-file entries and unmatched globs, so missing runtime JARs produce the intended diagnostic.
   - Preserve the error when multiple runtime versions are present and quote the source directory to support paths containing spaces.
   
   ### Tests
   
   - Passed `bash -n docker/quickstart-flink/prepare_build.sh` and `git diff --check`.
   - Passed six isolated copy scenarios using macOS Bash: release artifacts, SNAPSHOT artifacts, a single runtime JAR, no matches, auxiliary JARs only, and conflicting runtime versions. The scenarios also cover spaces in directory paths and matching directory entries.
   - Copied and byte-compared all five existing Fluss 1.0.0 runtime JARs from local release outputs.
   - The full Maven verification was started but stopped before completion.
   
   ### API and Format
   
   No API or storage format changes.
   
   ### Documentation
   
   No documentation changes are needed for this packaging hotfix.

   @wuchong seems like the integration test cannot pull/start the SeaweedFS Docker image, rest looks good!
   `ContainerFetchException: Can't get Docker image: chrislusf/seaweedfs:4.38`
