[ANNOUNCE] Flink Table Store has been changed to Paimon in package name and codes

Hi Paimon Devs,

In the package name, in the artifact ID and group ID of the project,
and in the code, Flink Table Store has been changed to Paimon. If
there is any residue, you can submit a PR to modify it.

Compatibility:
- For example, for creating Flink catalog, tablestore and table-store
of the identifier will not work. New identifier is paimon.
- The metadata in Hive Metastore will be compatible. Old meta can be
read by the new paimon project.

Publish snapshots is waiting for infra [1].
