For the JBI components, we probably have to work out one example first so we have some kind of structure to work.  I've tried creating one proposal for documenting a JBI component in servicemix-saxon:
# overview: namespace, 'empty' xbean.xml and a list of the endpoints types
# per endpoint type: one simple example, a description and a list of mandatory and optional attributes (this is a list now, I'd rather make that a table though)
# samples: a set of more advanced samples, showing off special use cases and features of the endpionts (e.g. dynamic template selection, parameter passing, ...)
