[ISSUE #5401] Bump develop project version to 2.0.0-SNAPSHOT (#5402)
The develop branch carries the 2.0.0 architecture but the build still
reports the 1.x lineage version 1.12.0-release. Flip the single version
definition in gradle.properties to 2.0.0-SNAPSHOT (dev-cycle convention;
build.gradle already branches on endsWith(SNAPSHOT) for the ASF snapshots
repository on publish).
