cTAKES namespaces updated in trunk

Hi,
The first pass of updating the project names, and namespaces (org.chboston, edu.mayo, edu.colorado, etc. -> org.apache.ctakes) have been updated in java srcs, xml descriptors, eclipse launch scripts in trunk.

If you already have an Eclipse IDE maven plug-in such as m2e, feel free to try and import the src directly from:
https://svn.apache.org/repos/asf/incubator/ctakes/trunk

Still plenty to do, but rather get a first pass out there sooner rather than later...
