Reduce hot-path allocations in IPC, Lua, and metrics (#14)

* perf(pipeline): encode completions without a heap buffer
* perf(lua): share readonly callbacks within each VM
* perf(lua): avoid temporary strings for uint64 projection
* perf(lua): encode fields without a temporary collection
* perf(egress): encode outputs into one buffer
* perf(ipc): unify direct queue encoding
Use one try_write_with entry point to encode into available queue space and
observe publication before notification. Retain Source records across Full
without an intermediate encoded buffer, encode completions in place, and
copy existing egress bytes once per destination.
Preserve atomic publication on encoder failure and cover Full, wraparound,
callback ordering, crash recovery, and cross-process callers.
* test(metrics): compare reported and observed spurious wakes
* perf(metrics): serialize decimal strings without temporary allocations
* perf(metrics): write Prometheus labels into response buffer
* perf(metrics): move owned plugin labels into snapshots
* perf(metrics): filter metrics before OTLP conversion
