   You'll need to add overloads of GenericToString, GenericFromScalar, and GenericToScalar here: https://github.com/apache/arrow/blob/master/cpp/src/arrow/compute/function_internal.h
   
   (Or, avoid the generic stuff and implement the FunctionOptionsType manually)
