[I] Consider unshading more dependencies from kudu-client [camel-quarkus]

   ### Description
   
   We already unshade Netty so that we can use `quarkus-netty` and avoid having to maintain our own custom Netty native support.
   
   Maybe we should so something similar for the other (maybe all) shaded dependencies. E.g
   
   * Micrometer
   * Protobuf
