Call Backs

Firstly, 
    Where can I find more information on Callbacks?
Secondly,
    Is it possible to turnoff any subsequent call back calls from inside a callback?

    i.e. Is it possible to store an object from inside an afterUpdate() call without the store firing an afterUpdate?
