Instead of a -bin.zip package, I think this would be better handled as a runnable tika.jar file that bundles all the dependencies. This way we wouldn't need to worry about bootstrapping scripts or other such details.

In my view the main use case for this standalone package is to make it easy for people to test Tika, by throwing different types of documents to it and observing what comes out. People who want to embed Tika in other products should preferably use Maven to get the dependencies.
