We'll remove the preference page because the configuration of a SOCKS proxy doesn't work, see a detailed explanation in https://issues.apache.org/jira/browse/DIRSTUDIO-1272.
As you already use SSH tunneling I think a workaround for you could be to do a dedicated port forwarding for your LDAP connections. Otherwise there seem to be 3rd party tools that handle socks.
