Retesting the 1.0.0 release against Chrome OS, the keyboard seems to be working just fine:

Same testing against Chrome running under Fedora Linux:

As there have not been any changes to the on-screen keyboard in the 1.0.0 release nor in recent memory, I don't believe what you're seeing is a bug in Guacamole, with the timing of the appearance of the issue on your end being coincidental. Other possibilities include:

* An extension within Chrome interfering with the relevant styling.
* Changes to server configuration which instruct the browser to block the {{<object>}} tag, which the Guacamole webapp leverages to receive resize events.
