[PR] WIP: Update to DataFusion 55.1.0 [sedona-db]

   This is a PR to track the updates required for the next DataFusion update. It's not complete yet...I only made trivial changes and a few that were required for sedona-expr and sedona-extension to compile so that there's a target for SedonaDB extensions that need DataFusion 55.1.0. (Notably: iceberg-rust!)
