After some digging I think we are hitting https://github.com/TooTallNate/plist.js/issues/40 which is still unfixed in plist-with-patches npm.
Moving back to plist should fix the issue. I understand the reason for switching to plist-with-patches in the first place was the huge footprint in node_modules, which is drastically smaller in the current version (though still way larger than plist-with-patches' footprint)
